In this model with three origins, there are three stories:
An old-fashioned blade, a handle made from Tanto, a type of wood from far away.
The Koyanagi is a short version of the Yanagiba fish slicing knife. This version is also ideal for small vegetables and herbs.
Shaped like a willow leaf, its soft lines are more reminiscent of ancient yanagiba than of modern yanagiba.
This model, with its removable handle on a mekugi pin, is designed for travel. An impromptu brunch by the sea after a stop at the fish market. Its detachable blade can be safely stored in a cloth, and is easy to clean and sharpen.

My blades are forged from carbon steel, which gives them an incomparable sharpness. Carbon steel sharpens easily, evolving and developing a patina over time. However, it requires a little more maintenance to stay in perfect condition.
My handles and saya are made from local natural wood. I use traditional methods of assembly and treatment that improve durability and are entirely chemical-free (except on this model, the handle was assembled with epoxy).
